Tater Tot Casserole – A Beautiful Mess


If you’re in need of a simple, crowd-pleasing meal, make this casserole. Even our two-year-old agrees. This is very comforting with basic ingredients and easy to love. In addition, this dish is suitable for many occasions. I personally like this as part of a big family breakfast served alongside eggs and maybe something sweet (like a sticky bun or cinnamon roll), but it can work as an addition to a main course or side dish at a potluck or holiday meal.

This may be a regional thing but you can also call this casserole dish a hot dish. It contains all the necessary ingredients: potatoes, meat and a can of condensed soup. 🙂 But in southwest Missouri where I live, we call it casserole.

  • Mushroom soup
  • Cheddar cheese
  • Tater Tots – Frozen
  • Chives or other fresh herbs

This casserole has basically five basic ingredients, but I’ll share with you some of the ways I season it so it’s more flavorful or seasonal.

Mince the garlic. In a frying pan over medium heat, brown the minced meat with the garlic until cooked (no longer pink). The meat may be undercooked at this point, so do not overcook it, as it will bake in the oven for another 35 minutes.

Remove the pan from the heat, add the can of soup, stir, and season with a little salt and pepper.

Now assemble the casserole. Grease a 9Ă—13 pan with a little oil. Add the meat mixture. Then sprinkle on grated cheese. Then add the tart pieces (frozen).

Bake in the oven at 350°F (177°C) for 35-40 minutes. The tarts should look golden brown and crispy and the mixture below will appear bubbly. Add chives or other fresh herbs and serve warm.

Tips for making

  • Sometimes, I’ll add more seasoning to the meat while it’s browning, just to add flavor. Some good additions include: chili powder, cayenne pepper, Italian seasoning, onion powder, or other seasonings you may like.
  • If you want to reduce the amount of fat in this dish, you can replace the ground beef with ground turkey or chicken.
  • I like to top this casserole with some green onions or chives, but you can use other fresh herbs like cilantro, rosemary, or thyme for the holidays.
