Sweet Potato Casserole – A Beautiful Mess

Sweet potato casserole is perhaps the most controversial of all holiday side dishes. Very funny Do you like brown sugar and pecan topping? Or are you in the marshmallow group? Is this recipe a side dish served with a meal? Or do you serve sweet potato casserole for dessert?

While these are very personal questions that you’ll obviously have to answer for yourself, here’s what I’ll offer. I’m a fan of marshmallows, although I have family members who much prefer the brown sugar pecan topping. So, I’ll be sharing both options in the recipe card below. Our family tends to serve sweet potato casserole as a side dish during the meal, not as a dessert.

Wash and cut the sweet potatoes. In a large pot of boiling salted water, cook until soft enough to mash – about 12-15 minutes. Drain well then mash in a large bowl.

Add to the bowl the egg, 1/4 cup brown sugar, milk, 1/4 cup butter (softened), salt, cayenne pepper, and 1/4 teaspoon cinnamon. Mash together.

In a greased 9×13 pan, spread the sweet potato mixture in an even layer.

To prepare the brown sugar topping, in a medium bowl, combine 1/2 cup brown sugar, all-purpose flour, 1/4 cup butter (softened) and chopped pecans. This mixture should be crumbly. Spread evenly over the casserole before baking.

If you are using mini marshmallows for frosting, wait to add them until the last 5-8 minutes of baking.

Bake the pot at 350°F (177°C) for 25-30 minutes.

Tips for making

  • To get a layer of marshmallow on top of that crunchy, caramelized layer, you can place the finished casserole under the broiler for a minute or two (watch closely!) or use a kitchen torch to broil the marshmallow tops.
  • If your family is split on toppings and want to make a half-and-half casserole similar to the one I pictured, keep in mind that the topping measurements on the recipe card are to cover the entire casserole. So, you want to split it in half.
  • You can easily prepare this sweet potato casserole in advance; Simply keep the toppings separate and cover the casserole in the refrigerator until you’re ready to bake.
