Spicy Veggie Pasta in Just 10 Minutes. Do you have any leftover vegetables? Don’t worry I got you, you don’t have to throw them away. Dice them up and bring your pasta loving friend. Let’s build it.
Spicy Veggie Pasta
- 500 Gr the pasta
- 100 Gr Tomato paste
- 2 eggplant
- 2 pepper
- ½ onion to cut
- 3 Gloves garlic to cut
- 10-12 Oregano leaves
- 100 Gr grana padano grated
Get a pot and add water. Add salt and let it boil.
When the water starts to boil add your pasta and cook for 6-7 minutes. (We will cook the sauce for an additional 2 minutes)
While the pasta is cooking, heat your skillet and add the olive oil. Allow to come to a slight temperature over medium heat. Chop onions, garlic cloves and add them Cut your eggplants into cubes and your chili peppers into strips Add them to the pan to season and go to full heat. Stir for 1-2 minutes.
Drain your pasta but reserve 1 cup of the pasta water. Add oil to your pasta so it doesn’t stick while we make our sauce.
Add tomato paste to the pan and mix. Add the pasta water to the sauce and reduce the heat to medium. Let it cook for 3-4 minutes or until more “thick”.
Add the pasta and mix with the vegetables. Add the grated cheese and stir until the cheese is combined. Serve hot and top with freshly chopped oregano leaves.
