Mole sauce is a traditional Mexican sauce that can be served in many different ways, including over meats such as chicken, instead of enchilada sauce, or as a dessert when served over fried plantains. Although I think it’s delicious, it has some ingredients that make it sweet as well. Mole sauce is one of those recipes that has a complex flavor and adds a lot of interest to any meal.

This version can be made in about 20 minutes using very basic ingredients you can find in most grocery stores.

  • garlic
  • chili powder
  • cumin
  • cinnamon
  • salt

  • Chicken broth
  • Chipotle pepper
  • Peanut Butter
  • Brown sugar

In a small to medium saucepan, heat olive oil over medium heat. Cook the chopped onion for a few minutes until tender. Then add the chopped garlic and cook for another minute. Add chili powder, cumin, cinnamon and salt. Roast it for another minute, then remove it from the heat.

Transfer the mixture to a blender. Add remaining ingredients. Until smooth blend.

Now pour the mixture back into the pot and cook over low heat until everything is hot. Taste and add more salt if necessary.

Tips and alternatives

  • You can replace the brown sugar with maple syrup.
  • I tend to add more cilantro on top of whatever I serve with this sauce.
  • If you want more heat, add another chipotle pepper to the sauce.
  • If you don’t have a blender, a food processor or immersion blender can also work well.
  • Store any unused sauce in an airtight container in the refrigerator for at least 5 days. Reheat on the stove or microwave before use.
