Homemade ingredients

Homemade cake

  • 1 1/3 cup sugar
  • 1/3 cup butter
  • 1/3 cup ghee
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 ½ cup flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1/3 cup heavy cream
  • 1/8 cup sour cream

Icing petit four

  • 6 cups powdered sugar
  • ¾ cup of water
  • 2 tablespoons corn syrup
  • 1 teaspoon vanilla extract
  • ¾ cup white chocolate chips

other ingredients

  • Sugar and/or sprinkles for decorating
  • Melted chocolate and food coloring for decoration
  • Jar of fruit preserves (You can choose your favorite flavors! We really like the raspberry and strawberry jam with cream cheese frosting.)
  • Frost container

How to bake a petit four cake

  1. Preheat the oven to 325 degrees Fahrenheit. Line a quarter tray with parchment paper, and grease the edges of the tray with butter.
  2. In a medium mixing bowl, sift the flour with the baking powder and salt. Beat sugar, butter and shortening together with an electric mixer until smooth and fluffy. Add vanilla extract and eggs (one at a time) until well combined. Add the dry ingredients, alternating between the dry ingredients and the heavy cream, and mix on medium speed until all the ingredients are combined. Fold in sour cream.
  3. Pour the dough into the lined and greased quarter pan. Spread evenly with a spatula and tap the pan on the counter to remove any air bubbles. Bake at 325°F for 20 minutes – until a toothpick inserted into the center of the cake comes out clean.

Layers of petit four

  1. When the cake is completely cool, remove it from the pan onto a piece of parchment paper and cut it into three pieces. Gently and carefully divide each third of the cake in half down the middle, so you have two equal layers. (Note: We cut the cake into three parts to make it easier to handle the cake pieces. But if you are a professional, you can skip this step!) Here’s how to bake a cake!
  2. On one side of the cut out cake, evenly spread a thin layer of frosting (store-bought). On the other half, spread the jam in a thin, even layer. (Note: Although it’s tempting to spread lots of frosting and jam on the cake, from experience we recommend a thin layer to make it easier to cut the mini petit fours 😉.) Carefully flip the sides together to make a jam and jam sandwich. in the middle
  3. Cut into 1-inch squares with a serrated knife. Use a butter knife to scrape off excess jam and cream from the edges of the squares. Place the 1-inch cakes on a plate and refrigerate for at least 30 minutes.

How to decorate and decorate petit fours

While the petit fours are in the refrigerator, prepare the decorations:

  1. Using a double boiler, combine the powdered sugar, water, corn syrup and vanilla extract. Whisk the ingredients together until you get a homogeneous mixture, then add the white chocolate chips. Continue stirring until the flakes melt and the frosting is smooth and pourable. Keep the cream on low heat to maintain this consistency. If the icing starts to thicken, add a small amount of water (1 tablespoon at a time), and whisk until the icing is thin enough to pour.
  2. After 30 minutes, take the petit fours out of the refrigerator. Place the petit fours on a fork (one by one), and use a spoon to pour the frosting over the cake – covering all sides. Gently tap the fork on the side of the double boiler bowl to remove excess ice. Using a toothpick, gently move the icing-covered petit fours onto a tray lined with wax paper.
  3. Decorate with sugar, sprinkles and white chocolate! The icing hardens quickly, so if you’re adding sprinkles or jimmy, do it right away! Decorating was also a lot more fun – and a lot faster! – With the help of a friend.
