Grasshopper Pie – A Beautiful Mess


Grasshopper pie is one of those recipes that seems to fit any season. On the one hand, grasshopper pie is a no-bake dessert that I tend to use more in the warmer seasons. But, on the other hand, this is basically the round version of the grasshopper cocktail, which seems perfect for Christmas to me. In case you’ve never had a grasshopper pie before, it actually bears the name and taste of a classic cocktail: Creamy Mint Chocolate! This no-bake dessert is very easy to make, using only six main ingredients.

  • Chocolate pie crust Oreo, gluten-free, etc.
  • Milk
  • marshmallows – standard (not mini)
  • Mentholment or creme de menthe
  • cocoa cream
  • Textures heavy whipping cream
  • Green food coloring – optional but I usually add a few drops

You may also want more whipped cream, chocolate chip crumbs, or fresh mint to decorate the top before serving.

In a large pot, melt the marshmallows and milk over medium heat, stirring so that it does not burn and that it all melts evenly. Once melted, stir in the alcoholic beverage. Leave this mixture to cool, but not harden.

In a stand mixer, or using an electric mixer, cream the heavy whipping cream into the whipping cream (with stiff peaks). Now fold the cooled marshmallow mixture into the whipped cream, and add a few drops of green food coloring if using.

Pour this mixture into the pie crust. Cover and refrigerate until firm, about 2-3 hours or overnight. Decorate the top with more whipped cream, crushed chocolate cookies, chocolate shavings, fresh mint, or whatever you like! Serve cold.

Tips for success

  • It may be helpful to remove the marshmallow mixture from the pan to allow it to cool more quickly while you prepare the whipped cream. This recipe is very simple but this is the most important part because you don’t want the mixture to be so hot that the whipped cream will melt when you fold them together.
  • Most store-bought crumb crusts come with a plastic wrap that you can flip over and use to cover the pie while it’s in the fridge.
  • This no-bake pie will last in the fridge for at least 2-3 days after you make it, if you have leftovers or want to make it before an event. However, the mint flavor will intensify over time.
