How to make granola cups

  1. Preheat the oven to 350 degrees. Spray two muffin pans with non-stick spray and set aside.
  2. In a large bowl, mix the oats, cinnamon, salt, pumpkin pie spice, and nutmeg until well combined. In a separate bowl, combine the brown sugar, pumpkin, applesauce, honey, and vanilla. Whisk the wet ingredients together until well combined and the honey is smooth. Pour the wet ingredients over the dry ingredients and mix until combined.
  3. Gently fold in almonds until combined. Pour 1/4 cup of batter into each cup of your muffin tin. Use the back of a spoon to firmly press the mixture into the pan, creating a granola cup shape. You’ll want to fill your granola cups as full as possible.
  4. Bake for 35 minutes, or until golden. Granola cups should be firm and spongy to the touch. Take it out of the oven and leave it to cool before removing it from the muffin tin. Allow to cool completely.

Add yogurt to pumpkin spice granola cups

Now that you have your cups, you can fill them!

We made our own granola cups in advance and filled them with snacks for the next day.

I love yogurt with fall flavors like maple, pumpkin, or apple.

You can also use simple vanilla and add a little cinnamon.

It is also good to use thick, creamy yogurt. The consistency holds well in granola cups and provides a nice base if you’re adding extra toppings.

Add silly faces to your recipe

Then start planning the toppings for your granola cups!

We used banana slices with mini chocolate chips to make the ghosts. We also made silly monster faces using grape or banana slices with chocolate chips for the eyes, and jagged avocado slices for the toothy mouths.

But use your imagination! The sky’s the limit, and you can even get your kids involved in the face-making process with their fun ideas.

Once you add the yogurt and toppings to your granola cups, they’re best enjoyed right away!

If you bake the cups in advance, they will store well in an airtight container for up to a week. Have fun and enjoy! xoxo
