Buffalo Sauce – A Beautiful Mess


This homemade buffalo sauce recipe is simple but has everything you need in a hot and spicy sauce. Buffalo sauce is different from hot sauce because it also contains butter and some other ingredients, which makes it a little more balanced, although it still contains a lot of spice, and this helps the sauce coat food items like chicken wings.

Buffalo sauce is believed to have been invented by the Anchor Bar in Buffalo, New York, and they used this sauce in their famous buffalo wings.

  • Hot sauce – such as Frank’s sauce
  • ghee
  • vinegar
  • Worcestershire
  • cayenne
  • Garlic powder
  • Onion powder
  • Salt and Pepper

In a small to medium sized bowl, add all ingredients. Whisk the ingredients together over low to medium heat until all ingredients are well combined. Taste and if you want to think it needs more salt or chili, go for it.

You can use this buffalo sauce right away. I usually do what I’m going to prepare while we’re cooking the air fryer wings. This recipe will make about 1 cup of sauce, so I often have enough to use in a couple different batches of wings or other recipes I might want to use this recipe on.

You can store this sauce in an airtight container in the refrigerator for at least five days but possibly longer. It will thicken and some of it may solidify during storage because the butter will solidify in cold temperatures. If necessary, simply reheat the sauce in the microwave or stove before using.

Tips for making

  • If you want to make this dairy-free, you can replace the butter with a non-dairy or vegan alternative, including margarine.
  • Sometimes I add a teaspoon or so of honey to this recipe to tone down the heat a bit.
  • Sometimes I will use apple cider vinegar instead of white vinegar in this recipe to deepen the flavor a little.
