Season the outside of the chicken with salt. Cover the piece with the flour mixture. Then dip it in the milk mixture, then dip it again in the flour mixture.

Once all the chicken pieces are finished baking, spray the inside of the air fryer with a light coat of cooking spray. Place the chicken pieces inside, being careful not to crowd the basket. It’s okay if they touch a little, but don’t crowd them because you want the hot air from the air fryer to circulate around the pieces.

Air fry at 360°F (182°C) for 15 minutes. Pause the air fryer and flip each piece of chicken. While you’re doing this, spray them lightly with cooking oil. Then cook for an additional 5-8 minutes. The chicken should be 165°F (74°C) inside when done, and it will be golden brown and crispy, too.

Tips for success

  • Legs and thighs are the cuts of chicken I use most often. Other cuts can work well too, but I’ve found that the breasts aren’t as good with this method. If you are using different pieces in one meal, try to use all pieces of similar weight otherwise the cooking time may need to vary.
  • You can add more spices to the flour mixture if you like! Try things like garlic powder, Italian seasoning, or cayenne pepper for a little heat. This recipe is simple and basic (and good!), but you can add more if you like.
  • Use chicken with skin. The skin will hold the bread better. Skinless chicken pieces are not great options for this particular recipe.
