  • kosher salt
  • Bell pepper
  • 8 ounces soft goat cheese
  • 2 tablespoons of honey
  • Fresh basil chiffonade 2 tbsp
  • 1/2 cup panko bread crumbs
  • 2 tablespoons olive oil
  • 1 egg (beaten)


  1. Line a rimmed baking sheet with parchment paper.
  2. Mix 1 tablespoon honey, 1 tablespoon basil, salt, pepper and goat cheese. (Mash together with a fork to break up the cheese effectively)
  3. Place panko and beaten egg in a bowl.
  4. Take equal amounts of the goat cheese mixture (about 1 teaspoon each) and roll into balls (should make 14 to 16 balls).
  5. Dip in beaten egg to coat then form each ball like a panko then place on a baking sheet lined with parchment paper.
  6. Place the baking sheet with the goat cheese mixture in the freezer for 30 minutes.
  7. While the balls are cooling, preheat the oven to 475°F. Brush the top of the goat cheese balls with olive oil then bake for 10 minutes.
  8. Rest for five minutes then transfer to a serving tray.
  9. Drizzle lightly with honey and garnish with fresh basil.

7. Pot o’ Gold Popcorn


Where is the joy of celebrating St. Patrick’s Day without a pot of gold? Here’s a pot of gold we can all afford (and eat!) – some pots of gold popcorn!


  • 1 cup unsalted butter (2 sticks)
  • 2 cups brown sugar
  • 1/2 tsp. Baking soda
  • 1/2 cup corn syrup
  • 1 tsp. Vanilla extract
  • 5 quarts popped corn (1 cup uncooked popcorn kernels)


  1. Preheat the oven to 250°F. Place the popped popcorn in a large bowl.
  2. Melt the butter in a medium saucepan over medium heat.
  3. Add brown sugar and corn syrup. Bring to a boil and stir constantly. Then boil gently without stirring for 2 minutes.
  4. Remove from heat and stir in vanilla and baking soda.
  5. Pour over popcorn and stir until evenly coated.
  6. Place in baking dish and sprinkle with sugar.
  7. Bake in preheated oven. Stir every 15 minutes, about 45 minutes to 1 hour.
  8. Remove from the oven and let it cool completely before serving.
